Commonly known as stuffed eggs or Russian eggs. No matter what you call them, no holiday is complete without them.
Lets jump right in!
1/2 cup mayo
1/4 cup dill relish
as much bacon as you would like
paprika for garnish (optional)
step one.. boil your eggs and peel them. I have found that the fresher the eggs, the easier they are to peel. Even then, you may get an egg with dents and chunks missing. Embrace it. Once your eggs are cooked. I like to put them in an ice bath to stop the cooking process.
step two.. cut the eggs in half. remove the yolk.
step three.. combine the egg yolks, bacon bites, relish and mayo. Add salt and pepper to taste
step four.. gently fill your eggs with the mixture. Sprinkle your garnish on top(optional). We topped our eggs with smoked paprika. It was a nice additional layer of flavor.
step five.. chill the eggs before serving for the best results.
