FINALLY, we have perfected our beer batter recipe and the time has come to share it with the world.
*This batter typically covers about 2 pounds of fish.*
2 pounds of Cod * cut into strips*
1.5 cups of Flour
1 teaspoon Baking Powder
1 12 oz bottle of beer * We used Blue Moon*
*salt and pepper to taste*
step one.. preheat your oil to about 375 degrees. While the oil preheats, mix the batter. I like to add the beer right before we are ready to fry to maximize the usefulness of the carbonation.
step two..dip the fish in the batter. Be sure to let the excess batter drip off before placing it into the oil. Fry each piece until golden brown and the internal temp reaches 145 degrees F.
Depending on how big your pot is, be sure not to overcrowd, this will drop the temperature on the oil. This may change the cooking time of each piece.
step three.. remove the fish from the oil allowing the excess oil to drain off on paper towels or a cloth.
Serve hot with a side of our homemade Lemon Dill Tartar sauce and your choice of side.
We like to use Cod when using a beer batter because it tends to hold up better. Feel free to use whatever you like and tell us how it turn out in the comments. 🙂
