One of our favorite go to lunches, is chicken salad. It is such an easy meal to prepare with items that you can find in your pantry or fridge.
Lets jump right in 🙂
1 pound of chicken breast
2 celery stalks diced
juice from 1 small lemon
1 jalapeno diced
1/2 cup of mayo
1 small onion diced
step one.. cook the chicken. If we plan to have chicken later in the week, we like to marinate the chicken in yogurt. It leaves the chicken full of flavor and unbelievably juicy and tender.
The Yogurt Marinade
We used a about half cup of yogurt and 1 teaspoon of cayenne pepper, black pepper and salt.
Mixed togther and set aside for about 1 hour – 2 hours
step two.. once the chicken has rested and cooled, dice it. Then combine in a large bowl along with the celery, jalapeno, onion, lemon juice and mayo.
step three.. cover and place in fridge until chilled.
We like to serve on a fresh loaf of bread from our local grocer or over crackers.
For a bigger kick of spice, we sometimes add cayenne pepper.
