Creamy Kale Pasta

We decided to throw together a quick flavorful pasta that included Kale.

It took us less than 30 minutes to make and it was a huge hit with the kids. Which is always a plus. ๐Ÿ™‚


2 bunches of Kale
1 package (or a pound) of Pasta – we used angel hair noodles
About 1 cup of heavy cream
1/2 cup or as much as you like of shredded Parmesan Cheese
**salt and pepper to taste**


step one: begin to cook your pasta according to the package instructions. While the pasta cooks, prep your kale. Simply tear the leaves from their stems into bite sized pieces. or you can chop off the obvious stemie part of the whole bunch. Then coarsely chop the leaves. It doesn’t have to pretty. It will all cook down. ๐Ÿ™‚ Then give the kale a quick bath to rinse away any dirt.

Pro Tip: Always. Always. ALWAYS season your pasta water with salt. Not only does the addition of salt adds flavor to the pasta, it also increases the boiling point of the water. In other words, your pasta will cook faster.

step two: while the pasta cooks, saute your kale in a large pan with a little bit of oil.

step three: once the kale has began to wilt, stir in your parmesan cheese and heavy cream. Allow to simmer over a low heat until your desired thickness has been achieved. For us, we usually let it simmer until our pasta is done cooking which is around 7-10 minutes.

step four: once the pasta has cooked, strain and fold into the creamy sauce. If you would like the pasta to saucier, I suggest adding more cream. Then allow the sauce to simmer for a wee bit longer. Then serve. ๐Ÿ™‚

We love spice, so we sprinkled red chili flakes just before serving. We have even finished the dish with juice from a wedge of lemon for a refreshing citrus kick.

You can really dress this up or down as much as you like and it will be a fast and delicious dinner.
